The individual pastry
The base is made from a Tanzania chocolate mousse with caramelised almond sparkles and a crunchy meringue coated in white chocolate. A coffee cream lies on a chocolate-almond biscuit. It is topped off with a chocolate mousse and a coffee whipped ganache.
