The cradle of Champagne Apollonis, located in Festigny in the Marne, has been in the family of Michel Loriot since the 17th century. This music-lover-winemaker helped by Martine Pierson, his companion, practices a new method called 'proteody'. Music for plants for a better resistance to diseases. The estate is essentially planted with pinot meunier (80%). From the sources of the Flagot (at Nesle-le-Repons), the Chardonnay plots dominate and follow the course of the river. The white grapes thus draw from the limestone marls, a minerality and straightness without equal. Certified HVE, Michel Loriot practices a grand cru pruning. A method which pushes his vines to be more qualitative and to draw with more amplitude from the soils. Grassing is practiced. The use of organic fertilizers and copper are privileged. Extra raw dosage.

Very beautiful pale yellow color, nose of white flowers, mirabelle plum and honey. The mouth is slightly spicy, evolving towards aromas of yellow fruits, honey and mirabelle plum. The bubble is fine and light.
