Accords mets et vins : Dom Pérignon Vintage 2009 is a wine that needs to be shaken, framed, stretched by contrasts. This champagne resonates both in the vegetal and mineral universe, calling for a sea urchin carbonara and cardamom mousse. The wine reveals itself in all its splendor when confronted with the ideal opponent, like an octopus marinated in a juice of Sicilian oranges and roasted in butter.

The guava and the zest of a green and spicy grapefruit mix with stone fruits, white peach and nectarine. The wine breathes, the whole is completed by a woody vanilla and the warm brioche very lightly toasted. The fruit is in majesty, ripe, fleshy and deep. Beyond the richness and a certain voluptuousness, it is the impression of consistency that dominates. The power is remarkably contained. All the sensations converge and persist, silky, salty and sappy, bitter and iodized.
