What makes it unique
This farm is unique in that it is the only maker of ‘farmhouse’ Meaux Brie in the Paris region. The herd of some one hundred cows whose milk is used to make the cheese spend some of their time grazing in the fields which contributes to the cheese’s aroma. The people of Paris hold a long-standing attachment to this cheese which has been sold on the capital’s market stalls since the 19th century.
Flavour and texture
Quite a runny Meaux Brie should be selected and it should be enjoyed when mature. It has a relatively powerful taste in this case with mushroom-like cellar aromas in the rind and animal notes inside.
The designation “Farmhouse cheese” applies to cheeses prepared exclusively with the milk from cows of a single herd. The milking of the cows and the production of the cheese must also take place on the same farm. Only the maturing process may occur in the cellars of an outside affineur.In the case of farm production, the milk is not standardized and the exterior factors (weather, season, feeding) modify the richness of the milk, thus resulting in cheeses unique to each production. A living product which requires a made-to-measure production process.
The Protected Designation of Origin is an official European quality sign adopted in 1992. The PDO guarantees that all the stages of production occur in the geographical area delimited by the designation, from the production of the milk to the maturing of the cheese. The production conditions of PDO products are registered in a bill of specifications, validated by the state and regularly controlled by independent organizations.
