Origin
The cheese is made by Jousseaume, a family that has been goat breeding (and has over 400 goats) in the tiny village of Roullet-Saint-Estèphe in the Charente Region of France for two generations.
What makes it unique:
Farmhouse unpasteurised goat’s milk cheese that is moulded with a ladle and then salted by hand. This cheese was created in the 1970s and has a unique dome shape which is actually a registered model.
Flavour:
A body that is full of finesse and is stunningly soft on the palate. The delicate scent of hazelnuts and the undergrowth develops as it matures.
Farmhouse Cheese:
The designation “Farmhouse cheese” applies to cheeses prepared exclusively with the milk from cows of a single herd. The milking of the cows and the production of the cheese must also take place on the same farm. Only the maturing process may occur in the cellars of an outside affineur.In the case of farm production, the milk is not standardized and the exterior factors (weather, season, feeding) modify the richness of the milk, thus resulting in cheeses unique to each production. A living product which requires a made-to-measure production process.
