The vineyard is located in two distinct regions: a Grand Cru, Aÿ, and two Premiers Crus, Dizy and Hautvillers, in the Grande Vallée de la Marne where our hillsides are rather sloping, facing east, south or south-west and where the chalk is always present under more or less deep coverings. But also two Grands Crus in the Côte des Blancs, Avize & Oiry where our parcels are south-facing, the chalk being flush with the soil. We use traditional farming methods with no or little amendment, our soils are ploughed or grassed, pruning is short, most of our treatments are organic... We wish above all to slow down the vigour of the vine in order to better reveal the parcel diversity and to reinforce the influence of the mineral on the fruit.

Accords mets et vins : Ideal as an aperitif, it will be perfect with osciètre caviar, raw marinated fish, fish carpaccio, a filet of St Pierre with lemon sauce.
This Blanc de Blancs champagne made in an extremely confidential way, from chardonnay from the locality of Corne Bautray, is incredible purity and elegance, it is a wine with notes of chalk and dried fruits, carried by a magnificent mineral tension. The absence of dosage lets the expressiveness and energy of this cuvée blossom. The bubble is of a remarkable finesse.
