Fauchon's pear and cornflower jams are made by hand in France. They are cooked in copper cauldrons in small quantities to respect the fruit. The fruits are chosen according to strict quality criteria: when they are ripe, for their taste, their smell and their resistance to cooking. The sweet and savoury flavours of the pear combined with the cornflower flowers make for a soft and delicate jam with floral notes.
