The birthplace of the famous "Coquilles Saint-Jacques" scallops can be found in the bay of Saint Brieuc. They live in a cold sea on a sandy seafloor. We created this rillettes recipe inspired by the famous "Coquilles Saint-Jacques à la Bretonne" recipe, in which the scallops are cooked in salted butter with shallots.
