Preparation
Step 1: Prepare the ingredients
- Steep tea for 3 minutes, then let cool before storing in the refrigerator at 4°C.
- Cut the strawberries and mix with the chopped mint, lemon juice and zest.
Step 2: Assembly and finishing
- We suggest serving this strawberry salad in a bowl and garnishing it with the iced tea syrup, adding small mint hearts, a shiso sprout and a hint of Espelette pepper.
- Best enjoyed chilled.
step 3: the syrup
- Bring the water and sugar to a boil.
- Add the tea and let it infuse for 3 minutes, covered, then strain through a chinois.
- Allow to cool before storing in the refrigerator at 4°C.
