Acacia honey lends itself to many uses thanks to its sweetness and fluid texture. Acacia honey does not crystallize (or only very slowly) mainly due to its specific sugar composition. It contains a very high proportion of fructose compared to glucose. However, it is glucose that tends to crystallize more quickly, while fructose remains in liquid form longer. This high fructose content gives acacia honey its fluid texture and long shelf life without crystallization. In addition, its low level of impurities and its acidity also contribute to slowing down this natural process. This is why acacia honey remains liquid and creamy much longer than other types of honey.

Acacia honey is naturally produced by bees from the nectar of acacia flowers, harvested in spring. The bees collect this fructose-rich nectar, bring it back to the hive, and then transform it using their enzymes during several exchanges. They then store this nectar in the cells where they evaporate the water by ventilating, which thickens the honey. Once the correct water content is reached, they seal the cells with wax to preserve the honey. The beekeeper finally harvests this clear, fluid honey, characterized by its mild taste and light texture.

Acacia honey has a light color, usually pale yellow to almost translucent, sometimes with slightly golden highlights. This very light hue is one of its distinguishing characteristics, reflecting its purity and sweetness.
