The sunny and generous mango pairs wonderfully with exotic fruits, vibrant citrus fruits, or fresh herbs like mint or basil. It thrives on contrasts: the spiciness of a sweet chili, the sweetness of white chocolate, or the creaminess of coconut milk. In a savory version, it enhances foie gras, ceviche, or mature cheese. Black tea and green tea come from the same plant, the Camellia sinensis, but their difference lies mainly in their mode of transformation.

The black teaundergoes complete oxidation, which gives it a dark color, intense aromas and woody, spicy or malty notes. Its taste is more full-bodied and it generally contains more theine, which makes it an ideal ally for a morning boost.

The green tea, on the other hand, is little or not oxidized, which helps preserve its bright color and its fresh, vegetal flavors. Lighter in theine than black tea, it is often appreciated for its antioxidant properties and its delicate, sometimes floral or herbaceous taste.

Flavored black tea first found its way into Europe in the 17th century, when tea shipments from Asia were sometimes infused with aromas during transport. Gradually, this flavoring became deliberate, initially with citrus fruits or flowers like bergamot. In the 19th century, Earl Grey embodied this new aromatic elegance. Over time, European tea houses, particularly French ones, pushed their creativity further, combining exotic fruits, spices, and flowers to create refined black teas suited to today's tastes.
