An infusion, a herbal tea, and a tea all refer to hot drinks, but they differ in their ingredients and preparation.

THE tea comes exclusively from the leaves of the Camellia sinensis plant and naturally contains caffeine.

On the other hand, a herbal tea is a beverage made by infusing plants, flowers, fruits, or spices other than the tea plant, and is generally caffeine-free.

The term infusion actually refers to the process of soaking plants in hot water to extract their aromas and active ingredients; it applies to both tea and herbal teas. Thus, all herbal teas are infusions, but not all infusions are herbal teas, and tea is a particular infusion with a specific origin.

An infusion, a decoction and a maceration are three methods of extracting the active ingredients from plants, but they differ in their method of preparation. infusion consists of pouring hot water over the plants, then letting them sit for a few minutes to extract the aromas and benefits, ideal for fragile parts such as flowers or leaves.

decoction involves boiling the plants in water for several minutes, which is best for harder parts like roots, bark, or seeds, in order to extract the tougher components.

maceration, on the other hand, consists of soaking the plants in a cold liquid or at room temperature for several hours or even days, often used to prepare alcohol or oil-based extracts, or cold drinks, without heating.

To prepare FAUCHON infusions, start by heating water to a simmer, ideally around 90°C to preserve the delicate aromas. Then place the tea bag or dose of infusion in a cup and pour the hot water over it. Let it steep for 5 to 8 minutes, depending on the desired strength. Remove the tea bag or strain the infusion before enjoying. This simple method reveals the full richness and finesse of the ingredients selected by Fauchon, for a unique and refined tasting experience.
