The madeleine was born in the 18th century in Commercy, Lorraine. According to legend, a young servant named Madeleine Paulmier improvised this little cake for the exiled King of Poland, Stanislas Leszczynski. Captivated, he named the sweet after its creator. Introduced to the court of Versailles by his daughter Marie, wife of Louis XV, the madeleine became a symbol of refinement. It definitively entered French culture thanks to Marcel Proust, who made it a trigger for memories inIn Search of Lost Time.

The secret to a perfectly rounded madeleine lies in mastering the right temperature and timing. It's all a matter of patience, precision, and the right baking: a delicate balance that allows the dough to reveal all its lightness and form that iconic, pretty hump.

The unique taste of the all-butter madeleine lies above all in the quality of its ingredients.
