The FAUCHON Christmas signature log

For the festive season, FAUCHON is presenting a gourmet log in a unique, made-to-measure setting. A winter tent, nestled in the heart of the ice floe, surrounded by fir trees sprinkled with snow. Executive Chef Sébastien Monceaux has teamed up with a French craftsman specialising in glass-blowing, Guillaume Roux from the 'As du Verre' workshop.

Together, they drew their inspiration from the shared characteristics between glass and the ice cap, highlighting elements such as transparency, clarity, frosted effects, and purity, skillfully playing with contrasts and colors. A two-point blown glass pinnacle represented a real manufacturing challenge. The vibrant pink shades instantly transport us into the dazzling world of lanterns illuminating the pinnacle. This creates a joyful and festive atmosphere, reminiscent of the magic of celebration and the circus, where enchantment and joy intertwine in a whirlwind of vibrant colors.

Each piece requires several stages of work: melting the glass at a temperature of 1100°C, gathering the liquid glass using a blowing iron, forming the preform, shaping and finishing, as well as cooling. Concentration is key at every step where skill and agility are essential to swiftly handle the molten glass before it solidifies.

A custom-made case for a very indulgent Yule log: made of a crunchy layer of pink praline and puffed rice, a soft almond and lime biscuit. Paired with a raspberry compote infused with lime zest, a creamy Timut pepper, and an intense raspberry mousse. All elevated by a whipped ganache with Tahitian vanilla and verbena berry wrapped in a delicate white chocolate shell.

In the mouth, it's an explosion of flavors and textures that will undoubtedly honor the indulgence of the year-end festivities. A true encounter between art, beauty, and taste, combining the expertise of our artisans with the house chefs, proudly made in France.

ABOUT THE 'ACE OF GLASS' WORKSHOP

Guillaume Roux, with 20 years of passion and experience, has followed a path that has nurtured his passion. It all started with watching the TV programme 'C'est pas sorcier'. Studying for a glassblower's CAP (vocational training certificate) and a 'brevet des métiers d'art' (diploma in artistic craftsmanship) strengthened his vocation, while his first experience at the Cristallerie Saint-Louis taught him rigour and method. Stays in Canada, New Zealand, England and Australia have given her a wealth of technical and artistic expertise. Thanks to this varied and rewarding career, Guillaume finally realised his dream in 2022, when he opened his own studio-gallery in L'Isle-sur-la-Sorgue (Provence-Alpes-Côte d'Azur): 'As du Verre'.
