Fossil salt is the result of the drying up of the seas millions of years ago, and is extracted from the subsoil of the Himalayan foothills. Very salty compared to common white salt, low in iodine, but rich in iron, hence the iridescent pink colour of its crystals, it adds a refined and original touch to dishes.
