The cradle of Champagne Apollonis, located in Festigny in the Marne, has been in Michel Loriot's family since the 17th century. This music lover-winemaker, assisted by Martine Pierson, his companion, practices a new method called 'proteody'. Music for plants for a better resistance to diseases. The estate is essentially planted with pinot meunier (80%). Certified HVE, Michel Loriot practices a grand cru pruning. A method which pushes his vines to be more qualitative and to draw with more fullness from the soils. The grassing is practiced. The use of organic fertilizers and copper are privileged.
