Since 1829, Bollinger has been making great Champagnes with a powerful, refined and complex style. This elegance has won the crown of England which, since 1884, has awarded the House the prestigious Royal Warrant, the mark of official suppliers to the court. Bollinger covers 178 hectares, the vast majority (85%) of which are planted with Grands Crus and Premiers Crus. Bollinger is the first Champagne House to obtain HVE certification. Soil enrichment, reduction of herbicides, biological control of insects, installation of hedges and orchards to preserve biodiversity. A majority of reserve wines of which a part is kept in magnum for 5 to 15 years.

Grape variety : 70% Pinot Noir, 30% Chardonnay. 14 crus: mainly Aÿ and Verzenay for the Pinot Noir, Cramant and Oger for the Chardonnay, i.e. 91% Grands crus and 9% Premiers crus. Serving temperature : 8/10°

Accords mets et vins : This magnificent champagne will accompany noble dishes such as foie gras (fresh or fried), a lobster, a fish in sauce or grilled, a roasted lamb, or a cheese such as Parmesan or Comté 36 months.

One of the specificities of the Bollinger house is to carry out a fermentation in barrels in its entirety and twice as long as the standards of the appellation. Maturing then takes place in small old oak barrels. This is how we obtain a cuvée of such complexity and delicacy. Its dosage of 7 grams of sugar per liter gives it purity and finesse. On the nose, La Grande Année 2007 reveals fragrances of fresh almond, juicy fruits such as peach, followed by roasted and dried citrus notes. On the palate, one immediately notes its rich and complex aromas and its vinosity. On honeyed touches of candied lemon it is a fresh cuvée that surprises by its chalky texture and delicate bitterness.
