The estate is located in the commune of Courgis in the heart of the Chablis region and cultivates 7 hectares of vines. This Chablis cuvée is a wine for the trade produced from grapes purchased from winegrowers working in organic farming. The vinification and maturation are carried out at the estate by Alice and Olivier. The estate is certified organic. This wine is made from 2 parcels with complementary geology: one on brown clay and the other on white clay, all on a limestone mother rock, hard marl. Age of the vines: 20 years. Certified organic and biodynamic estate, late harvest and manual harvest, long fermentation in barrels and on fine lees, without stirring. Micro dose of sulphur at bottling. Pale yellow colour. Nose evolving towards citrus fruits, lots of freshness.
