6.5 ha of vines spread over 35 plots of land among the most beautiful terroirs of Champagne (AY, Mareuil-Sur-Ay, Mutigny and Epernay). Founded in 1947 by Roger Pouillon, James his son James then developed the house in a fantastic way, to give way to Fabrice, a high-flying technician, in love with his terroir. Regular ploughing on horseback, preservation of the parcel ecosystem, use of farm compost. Respect of the biological rhythms of the vine, short pruning, limited yield. Hand picking in crates. Fermentation with indigenous yeasts. Dosage 5g/l

Accords mets et vins : As an aperitif, on a risotto of grilled prawns, a sole with lime, a sea bass, a fillet of roasted pike-perch with its grenaille potatoes, a semi-cooked foie gras, smoked salmon.

Beautiful gold color with fine bubbles. The nose is floral with hints of pine, hawthorn, acacia, followed by fruity notes reminiscent of the freshness of the morning. The mouth is perfectly balanced, notes of white flesh fruits dominate, the finish is persistent and slightly honeyed.
