Château le Puy uses the "organic" and "bio-dynamic" methods, which are somewhat surprising terms, to say that we practice the cultivation of the vine as our grandfathers did, that is to say without the addition of chemical fertilizers, herbicides or synthetic insecticides. During the harvest, special care is taken to ensure that the grapes are not crushed before they reach the vat room. There is therefore practically no oxidation of the must before the start of fermentation. Yeasting and chaptalisation are not used. Its colour is garnet, tending towards ruby for the younger vintages, with orange reflections for the older vintages, and onion skin for the very old. Its nose is fruity with aromas of very ripe red fruits, mainly blackcurrant, redcurrant and also burnt almonds, sometimes mushrooms, undergrowth. Round, full, delicate, velvety tannins with a long and pleasantly complex finish.
